Classic Wild Salmon with Sitka Secret Sizzle
(Grilled is preferred)
Ingredients
• 1 lb wild salmon fillet, skin on
• 1–2 tbsp extra virgin olive oil
• 1–2 tbsp Sitka Secret Sizzle
• Lemon wedges, to serve
Method
1. Preheat grill to 350–400°F.
2. Pat the salmon dry, then coat the fillet all over in extra virgin olive oil.
3. Shake a generous amount of Sitka Secret Sizzle across the top and press it in.
4. Place skin-side down and cook for 6 minutes.
5. Flip and cook another 3–4 minutes, until the fish flakes easily.
6. Squeeze lemon over the top and serve.
Tip: This same oil-and-shake method works in the oven or in a cast-iron skillet.
Pan-Seared Halibut with Sitka Secret Sizzle

Ingredients
• 2 halibut fillets (about 6 oz each)
• 1–2 tbsp Sitka Secret Sizzle
• 2 tbsp butter
• 1 tbsp neutral oil
• Lemon, to serve
Method
1. Pat halibut completely dry — dry fish is the secret to a real sear.
2. Shake Sitka Secret Sizzle over both sides and press it in.
3. Heat oil in a cast-iron skillet over medium-high until shimmering.
4. Lay fillets in and sear 3–4 minutes without moving them, until golden.
5. Flip, add butter, and baste 2–3 minutes more until the fish flakes (130–135°F).
6. Finish with a squeeze of lemon.
Tip: This same method turns black cod or lingcod into a weeknight standout.
Sitka Secret Sizzle Grilled Chicken & Veggies
Yes, it’s a salmon seasoning. No, it doesn’t know that. Your weeknight workhorse.
Ingredients
• 1.5 lbs chicken thighs (or breasts)
• 1 zucchini, sliced
• 1 red bell pepper, chunked
• 1 red onion, wedged
• 2 tbsp extra virgin olive oil
• 2–3 tbsp Sitka Secret Sizzle
Method
1. Heat grill to medium-high.
2. Toss chicken and vegetables with olive oil in a large bowl.
3. Shake Sitka Secret Sizzle over everything and toss to coat evenly.
4. Grill chicken 5–6 minutes per side (165°F internal); grill vegetables 3–4 minutes per side until charred and tender.
5. Pile it all on a platter and serve.
Tip: Same seasoning, sheet-pan version — roast everything at 425°F for 25 minutes.
